Organoleptic Characteristics and Harmonization
Jancis Robinson defined Bargylus as “the best wine produced in the Eastern Mediterranean”. This high praise is not given for nothing. When we tasted the two labels from this producer, we were delighted with both. They are “war wines”, as Wine Spectator rightly pointed out, and it is incredible to see the level of quality they manage to achieve even in such adverse conditions. The blend was produced under the guidance of renowned French winemaker Stéphane Derenoncourt, using grapes harvested on Mount Bargylus, located on the mountainous coast of Jebel Al-Ansariye, a place where wine production dates back to the time of the Roman Empire. The stony soils and the continental climate with harsh winters and intense summers give rise to an expressive and unique wine. It was aged for 12 months in contact with yeasts and the care taken in its preparation even includes a vintage cork. The aroma has notes of green apple, pear, papaya, flint and a sweet touch (reminiscent of honey or burnt sugar). It shows a lot of presence in the mouth. Super full-bodied and unctuous, it reveals flavors of ripe peach, lychee and a light herbaceousness, characteristic of Sauvignon Blanc, with a long finish that brings citrus and mineral nuances. A long-lasting and memorable white wine, of super limited production, which certainly deserves a prominent place in the cellar. The wine is ready to drink, but can be enjoyed, still at its peak, until the end of 2024. Beautiful.
