Rías Baixas is located in the province of Pontevedra, on the coast of Galicia, the coldest and wettest region in Spain. It got its name from its deep, flooded coastal valleys that stretch for miles inland. The Albariño grape, an icon of the region, is one of the most renowned white grape varieties in the Iberian Peninsula, famous for producing aromatic wines with stimulating acidity.

This Albariño is pure structure and elegance, with a special touch of salinity, thanks to its proximity to the Atlantic Sea.
The “sobre lías” (on the lees) or “ sobre las madres del vino ” (on the mothers of the wine) technique involves keeping the wine in contact with the already overloaded yeasts, which settle at the bottom of the tank at the end of fermentation, for a minimum of five to six months. This process gives the wine greater stability, adding new aromas, retaining them for longer and increasing aromatic persistence. It also improves the smoothness and unctuousness of the wine, giving it greater creaminess and a dense sensation in the mouth. This process is applied to all Castro Martin wines.
Visual: Straw yellow with greenish reflections.
Smell: It stands out with a distinct mineral touch on the nose and a set of pure and clean aromas of white fruits, field herbs, melon and honey.
Palate: Vibrant on the palate, it presents fresh mineral acidity balanced by fruit, with notes of peach and pear, and a touch of lemon. It is a fine and elegant Albariño, with beautiful persistence on the palate.
Harmonization: Enjoy it as an aperitif or with salads, fresh cheeses (ricotta), mushrooms, seafood, poultry and oriental recipes. For a truly Galician experience, pair it with fresh oysters or a gazpacho !
