There is a quality indicator that is a source of pride for many producers around the world. It is the term Old Vine . In the United States, this expression is commonly used in Californian Zinfandel wines. This means that the old vines, which are the raw material for these wines, produce fewer bunches of grapes. The result is greater sun exposure and greater nutrient intake, which leads to a more concentrated wine with soft tannins and balanced acidity.

Xanthos comes from vines that are over 50 years old!

Visual: Ruby red with slight dark brown reflections.

Smell: Complex and expressive aroma, full of red fruits. After breathing a little, notes of oak and toasted vanilla emerge in the glass.

Palate: On the palate, rich layers of dark red cherry, juicy pomegranate and plum flavors are tempered by fresh sage and earthy notes. It finishes with lovely peppery notes.

Harmonization: Hard and semi-hard cheeses (parmesan, gouda, gruyère), Italian salami, red meats, pork, t-bone steak , dishes with condiments (barbecue, garlic, pepper, saffron, curry), burger and ribs with American-style barbecue sauce!

From Hollywood to the land of wines

Raised in the heart of the entertainment industry, the owner never made it to the big screen, but found the thrills he was looking for in winemaking.

As the name suggests, Precision Wine Company offers a superior collection of wines that live up to the Napa Valley’s reputation. Meticulous attention to detail goes into each product, from the planting of the grapes to the creation of the original packaging design. Their standout labels include Xanthos Zinfandel and Precision Cabernet Sauvignon.

The company's owner, Trevor Sheehan, grew up on the Paramount Pictures lot in the heart of the Los Angeles entertainment industry, where his father was a television executive and his mother created commercials for movies. Although he didn't follow in his family's footsteps, it was in the arts that he felt a calling.

One day, in Dallas, where he was studying for a master's degree in business administration, he went to see a taping of Jay Leno's The Tonight Show and told him that he planned to work in accounting. "Ah, accounting! The fast cars, the thrills, the trips to exotic places," the comedian joked. The answer made him wonder if he should pursue a more exciting career.

Change of scenery After obtaining his master's degree, Trevor even worked at Grant Thornton, one of the largest accounting networks in the world. However, along the way, at a wine shop he frequented in Texas, his winemaking side had already emerged and led him to discover Burgundy and other wine regions in France, where he began to study winemaking techniques.

But it was in the United States, while tasting a Sonoma County Chardonnay, that he called the number on the bottle’s cork, which led to a friendship with the winemaker who encouraged him to visit Northern California. The visit inspired a move to Napa, where he soon began producing Carneros Chardonnay and selling it to local retailers and restaurants. Today, Precision’s best-selling brands can be found throughout Europe and the United States, as well as in 15 other countries around the world.

California

United States

Located on the west coast of the United States and bathed by the Pacific Ocean, the State of California is among the four largest wine-producing areas in the world, behind only France, Italy and Spain. It is also responsible for 90% of domestic production. The Mediterranean climate is largely responsible for the quality of its wines, since the presence of strong winds, sporadic sunlight and the precise location of rainfall guarantee the ideal conditions for growing grapes.
