Organoleptic Characteristics and Harmonization
Ionos is an abbreviation for the term "Kalos Ionos", which literally means "Good Omen". It was made with the high-altitude red grape called Roditis, from 20-year-old vines in the Achaia region, with a complement of international Syrah. The berries were hand-picked early in the morning when the weather was still cool and taken directly to the press at a temperature of 15ºC for up to 48 hours to resolve the static before fermentation. As for its color, this example has a beautiful, intense and bright cherry pink with silver halos that make us want to taste it without delay. It is a dry and extremely light and delicate wine that shows all the characteristics of the terroir where it was born. On the nose it presents delicate and fresh aromas of cherry liqueur and the fruitiness is of strawberries and ripe cherries. On the palate it is very light and pleasant with notes of fresh red fruits such as strawberries and red flowers, it is very balanced, showing just the right amount of acidity. The finish is delicious, fruity and mineral. Pairing: Pleasant to enjoy on its own or to accompany canapés, salads with fruits and seafood, small fish and cheeses that are not too fatty. It also pairs well with shrimp risotto. It should preferably be consumed at 10°C and does not require prior aeration in a decanter. We suggest enjoying it in narrower, medium-sized glasses, as this allows the delicate aromas to be highlighted and facilitates better perception. The wine is ready to drink, but can be enjoyed, while still at its peak, until the end of 2023.
