Moldova is a small Eastern European country with around 2.5 million inhabitants. It is located between Romania and Ukraine and its main economic activity is winemaking, home to some of the largest wineries on the planet. There are five areas with PGI – Protected Geographical Indication: Divin, a general indication, which covers the entire territory of the country and whose grape production is aimed at the production of distilled spirits; and the four well-divided regions of Balti, in the center-north, Valul lui Traian, in the southwest, Stefan Voda, in the southeast, and Codru, in the central area of Moldova. Located in the southwest of the PGI Codru, Imperial Vin is a winery founded in 1977 focused on the production of high-end wines. To achieve this, the company carefully cultivates its vineyards in the excellent terroir of Codru, which benefits from a latitude practically identical to Bordeaux, a continental climate with well-defined seasons (the average annual temperature is around 9.5 °C, with temperatures reaching a freezing -20 °C in winter and rarely reaching 30 °C in summer) and a huge number of sunny days per year. The highlight is its fertile dark chernosol soil, characterized by a high quantity of organic matter, humus, clay, phosphoric acids, magnesium and calcium carbonate. The Reserve Chardonnay is considered the company's best white wine. It is a selection of the best grapes, carefully vinified, as all fermentation is carried out in French oak barrels, where it also matures for 6 months before being bottled. The nose is rich and charming, with impeccable aromas of tropical fruits, such as peach, pineapple, passion fruit and melon, surrounded by notes of vanilla, white chocolate and shortbread, finishing with pleasant herbaceous and floral nuances. In the mouth, it is very balanced, showing a slightly buttery texture, good body, great intensity and salivating acidity. The flavor profile follows the aromatic description, especially tropical fruits and garden herbs, with a very pleasant and persistent touch of shortbread in the finish. Pairing: a good pairing with fresh and soft cheeses, as well as salads with fruit. For the main course, choose white fish fillet with black rice and seafood stew, a more than perfect combination. We suggest enjoying it at 10°C in smooth, crystal-clear, medium-sized Bordeaux glasses. The wine is ready to drink, but can be enjoyed, still at its peak, until the end of 2023.
