Come on! It takes winemaking knowledge and a good bottle to appreciate a magnificent wine like Daria Cabernet Sauvignon. In the glass, it is almost ugly, almost opaque, almost milky, with no shine or fresh fruit. We are looking at something special, almost 12 years old and well evolved. Located in the Sakar sub-region, close to the borders with Greece and Turkey, Alexandra Winery is the company responsible for the vinification of this varietal, carried out in the traditional way and aged for 12 months in Romanian oak barrels. It is worth noting that Sakar is one of the most suitable areas for winemaking in the country, called by some the "Napa" of Bulgaria. It is a place greatly influenced by its proximity to the Aegean Sea, with characteristics such as mild winters, hot and dry summers, granite soil, and many hours of sunshine throughout the year. As soon as we received this news, I grabbed a bottle and took it to a dinner with friends. I already knew what I was going to find in it and couldn't contain my excitement about tasting it, as I love wines that have more age and have evolved. However, I had another intention: I wanted to see the reaction of each of the other six people at the table, some of whom had good volumes and others had less, some of whom had little experience in this world. Before serving, I introduced the wine and explained that some people might find it strange, as it didn't have the beauty and shine of the wines they were used to tasting, but that if they didn't like it, there were other bottles ready to be served. One of the diners, as he poured the wine into the glass and saw its unusual color, said that he didn't think he would like it. The others remained silent to taste it before expressing their opinions. Well, to keep this text from getting too long, I'll go straight to the result. The bottle was finished in less than 10 minutes. The wine pleased everyone, without exception. Everyone spoke positively of it and even said that you can't tell the truth by looking at it, something I had heard before. The flavor of this wine is pure dried fruit with clear dried plums, black plums, bananas and figs. The beautiful acidity that is still present in it is impressive, making us salivate, asking for more wine, and a persistent and long-lasting aftertaste that lasts for more than 5 minutes. In short, a sensational experience for those who are open-minded and want to get out of their comfort zone. I described the wine and the occasion exactly as it happened, because I want to clearly show customers what this wine is really like and, if they choose to buy it, they will be aware of what they will find inside the bottle. On that occasion, we paired it with grilled beef and grilled vegetables and it was divine. In my opinion, a beautiful and pleasant surprise that delivers much more than a good wine, a true experience.
